- 4 beaten eggs
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella
- 1/2 cup oil
- 3 cups thinly sliced zucchini
- 1/2 onion thinly sliced
- 1 teaspoon fresh parsley minced
- 1 teaspoon garlic powder
- 1 cup biscuit baking mix
- Preheat Oven 350
- Combine:
- biscuit,eggs,cheese & oil – blend till smooth
- Add:
- zucchini, onion & spices – stir well
- Spread in lightly greased 9″ pie plate
- Bake 30 minutes
